Our Story

23 yrs of cheffing has led me around the world, eventually owning my own restaurant in Sweden - I'm so grateful for this wild & challenging career, working with different ingredients and cultures from all corners. Since selling my restaurant I've landed in the Northern Rivers, my birthplace. I grew up in the stunning bushland of Pillar Valley and have memories of emu’s, dingo’s and kangaroo’s running around the tent I was raised in while we built our house. I was and still am a bush kid from Pillar Valley, curious and excited about food.

In Sweden I watched excitedly as our Indigenous food scene exploded - ingredients like Ooray Plum & Fingerlime among many others were making an appearance in restaurants and I couldn’t wait to get home to explore their uses, these are wild foods I grew up walking past and had no reference to identify them.

I'm so proud to use these ingredients from where I was born and help show the world their potential.

Bush Icecreamery was born in 2025, it has fast grown a reputation for quality - utilising ingredients from our local bush, all our produce is foraged or farmed by producers we trust.
